To start, you will need:

- 12 tablespoons unsalted butter, at room temperature
- 1 3/4 cups granulated sugar
- 2 large eggs
- 2 1/2 tablespoons cocoa powder, sifted
- 4 tablespoons no-taste red food coloring
- 1 teaspoon pure vanilla extract
- 1 teaspoon salt
- 1 1/2 cups whole milk
- 3 1/4 cups all-purpose flour, sifted
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons apple cider vinegar

- 6 ounces cream cheese, at room temperature
- 4 tablespoons unsalted butter, at room temperature
- 1/4 teaspoon pure vanilla extract
- 4 cups confectioners' sugar, sifted
Steps:

First preheat your oven to 350 degrees Fahrenheit and line 2 cupcake trays with cupcake liners.
Cream together softened butter and sugar until light and fluffy.
After light and fluffy, add in one egg at a time and mix carefully after each.
In another bowl, mix red food coloring, cocoa powder and vanilla extract.
Then, slowly add the bowl with coloring into the bowl with eggs, sugar and butter. Mix until well incorporated.
In another bowl, combine milk and salt.
Alternate between adding 1/3 of the flour and 1/3 the milk while mixing in between.
Mix together apple cider vinegar and baking soda in a separate bowl.
Add the fizzy substance into the mixture and mix.
Scoop with an ice cream scooper (optional) into the cupcake liners and bake for bake for 18 minutes...until toothpick comes out clean.
After baked completely, set aside to cool.
--------- for frosting
Beat cream cheese and butter until light and fluffy.
Beat in vanilla extract.
Beat in confectioners sugar.
Transfer into a piping bag (or any other bag. ex: ziplock bag...) and decorate your cooled cupcakes!
