For May, Girls Who Bake made bite-sized soft pretzels! Super easy and so soft on the inside :D
Dough Ingredients:
- 2 ¼ cups flour
- ½ tsp salt
- 1 tsp sugar
- 1 tbsp instant yeast
- 1 cup warm water
Baking Soda Bath Ingredients:
- 5 cups water
- ¼ cup baking soda
Steps:
1. Preheat the oven to 450
2. Mix flour, salt, sugar, and yeast into a bowl.
3. Add warm water and mix until dough becomes shaggy.
4. Knead the dough for 5 to 10 minutes.
5. Add the dough to a greased bowl, cover it and let rise for 30 minutes.
6. Cut the dough into 4-5 sections, roll each section out and then cut into bite sized pieces.
7. Boil the baking soda bath ingredients and submerge the pretzels bites for 30 seconds.
8. Salt the pretzels, and bake them for 12 minutes or until golden brown.

- 2 tablespoons all-purpose flour
- 1 cup milk
- 8 ounces cheddar cheese or processed American cheese
- 1/8 teaspoon cayenne pepper
Steps:
1. Melt butter in a saucepan over medium-high heat.
2. Whisk in flour and cayenne pepper and cook 1 to 2 minutes.
3. Whisk in milk and bring to a simmer.
4. Reduce the heat to low and add in cheese.
5. Stir until cheese is melted.
