Over our spring break, Girls Who Bake made banana bread! This recipe is bananas and we hope you enjoy it as much as we did!!
Here's what you need to bake this delicious treat!
- 3 ripe bananas
- 1/2 cup melted unsalted butter
- 2 eggs
- 1/2 cup brown sugar
- 2 cups all purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 cup pecans or any other nuts of your choice
And here are the steps!
Preheat oven to 350°F
Mash the bananas in a large mixing bowl
Add in melted butter (leave 1 tablespoon of butter out to use for later)
Pour the brown sugar in (leave 1 tablespoon of brown sugar out to use for later)
Crack in the eggs
Whisk until combined
Add the flour, salt, baking soda, and baking powder
Mix with a spatula until there are no dry spots left
Roughly chop the pecans, but set aside a handful of the larger pieces.
Pour pecans into the mixture and stir until combined
Pour batter into a greased loaf pan, lined with parchment paper
Smooth the batter out. Sprinkle the pecans set aside earlier and gently push them into the batter
Sprinkle on the brown sugar we saved earlier, and drizzle on the saved butter
Cover the top of the pan with aluminum foil
Bake for 1 hour
After 1 hour, remove the foil and bake for another 10-15 minutes
Let it cool and enjoy!
